Three Bean Casserole

Ingredients:
1 lb. hamburger
1 medium onion
1/2 cup packed brown sugar
3/4 cups catsup
1 tbs. worchestershire sauce
#2 can (2 1/2 cups) lima beans (drain)
#2 can (2 1/2 cups) light kidney beans (drain)
#2 (2 1/2 cups) can of pork and beans – do not drain.
Directions:
Cook hamburger and onions in a skillet until browned.
Drain off excess fat.
Mix brown sugar, catsup, and worchestershire sauce and add to meat mixture.
Combine with all three types of beans (make sure you have drained the lima and kidney beans).
Put in a casserole dish and bake for 1 hour at 350° F.
Clean the Freezer Soup

When I came home from the publicity tour, I didn’t have a clue what was in my pantry, refrigerator or freezer. So I took stock. What I found was a bunch of half-used and nearly-used bags of everything in the freezer and not much of anything anywhere else. Time for Clean the Freezer Soup.
Cook’s Notes:
How fast you can make this soup depends on how fast you can clean your freezer, but assembly should take no more than 10 minutes of actual effort. Anything goes in this soup, except do not use broccoli, cauliflower, Brussels sprouts or frozen spinach.
Ingredients:
8 ounces frozen extra-lean meat, such as round steak, hamburger or chicken
6 cups assorted frozen vegetables, such as corn, peas, beans, potatoes, carrots
3 cups water
1 can (14 1/2 ounces) nonfat chicken broth
1 1/2 cups bottled spaghetti sauce or tomato sauce
1 can (14 1/2 ounces) crushed or stewed tomatoes, optional
1 cup (1 large) onion, peeled and coarsely chopped
2 teaspoons Worcestershire sauce
1 teaspoon sugar
1/2 teaspoon each salt and pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1 teaspoon reduced-sodium chicken-flavor bouillon crystals (or 1 cube), optional
Directions:
Put all ingredients in an electric slow-cooker (3-quart or larger). (If freezer vegetables do not include potatoes, you can add 1 1/2 cups fresh potato cubes.)
Cook on low heat overnight or for 8 to 10 hours. When the soup is cooked, remove any large pieces of meat and shred them. Return meat to pot and stir. Soup keeps refrigerated for several days.
Makes 8 servings (1 1/2 cups each).
One Skillet Spaghetti

Ingredients:
1/2 lb hamburger
1 onion, chopped (about 1/2 cup)
2 cups whole tomatoes, undrained
1/4 cup green peppers, chopped
1/4 cup water
1 teaspoon salt
1/2 teaspoon sugar
3 1/2 ounces thin spaghetti, uncooked
1/2 cup cheddar cheese, shredded
Directions:
Cook and stir hamburger with onion in a 10″ skillet or Dutch oven until hamburger is light brown; drain off excess grease.
Stir in tomatoes, with liquid, green pepper, water, salt, sugar, chili powder and spaghetti, breaking up tomatoes with fork.
Heat to boiling; reduce heat.
Cover and simmer, stirring occasionally until spaghetti is tender, about 30 minutes. Add a little water during cooking if necessary.
Sprinkle with cheese; cover and heat until cheese melts.
Fast Hamburger Casserole With a Mexican Twist

Ingredients:
10 ounces pasta (I used spirals)
1 1/2 lbs hamburger
1-2 medium onion, chopped
1 bell pepper, chopped
2 garlic cloves, minced
1-2 ounce taco seasoning (I used a whole sachet)
1 cup water
1 cup taco sauce (I used medium heat, but any other would be okay)
1 cup sour cream
3 cups cheddar cheese, grated
1/4 cup jalapeno peppers, minced, add to taste
1/4 cup black olives, sliced, add to taste
Directions:
Cook pasta in salted boiling water according to package directions. When done, drain and set aside. By the way, I managed to finish everything else in the time that it took the pasta water to come to a boil and the pasta to then cook.
When pasta water comes to a boil, preheat oven to 350 degrees.
Saute the hamburger in a large frying pan. Mash with the back of a wooden spoon, so it crumbles into little pieces.
When the hamburger has lost most of its pink, add the onion, bell pepper and garlic. Saute until everything is softened to your taste.
Add the taco seasoning and the water. Stir well and simmer, uncovered, for 5–10 minutes—until the water evaporates.
Turn off heat to frying pan.
If your frying pan is big enough, you can keep adding ingredients to it and cook it all in the same pan. Otherwise transfer the meat mixture to a Dutch oven before continuing.
Add the taco sauce, sour cream, 2 cups of the cheese, and the jalapeños and olives if you are using them. Stir well.
Bake in oven for 30–40 minutes—until it’s nice and bubbly.
Ten minutes before the casserole is done, sprinkle the last cup of cheese over the top.
Basic Baked Spaghetti

Ingredients:
3/4 pound lean ground beef
1 (16 ounce) jar spaghetti sauce
1 pound spaghetti
1 cup shredded mild Cheddar cheese
Directions:
Preheat oven to 350 degrees F (175 degrees C). In large skillet, cook hamburger until brown. Mix spaghetti sauce into skillet. Reduce heat and simmer.
Meanwhile, bring a large pot of lightly salted water to a boil. Mix in pasta and cook for 8 to 10 minutes or until al dente; drain.
Mix together spaghetti and meat mixture, pour into 9×13 pan. Top with cheese and bake for 30 minutes, or until heated through and cheese is bubbly.
Hamburger Soup (aka Spicy Potato Soup)

Ingredients:
1 lb ground beef
4 Cups cubed, peeled potatoes (6 – 7)
1 Small onion, chopped
3 Cans (8-oz each) Tomato sauce
4 Cups water
1 teaspoon salt
1 teaspoon pepper
2 teaspoons hot pepper sauce (Texas Pete)
1 Small can whole kernel yellow corn
1 Cup frozen cut green beans – OPTIONAL
Directions:
In a large kettle, brown ground beef and drain.
Add potatoes, onion, and tomato sauce.
Stir in water, salt, pepper, hot pepper sauce, corn and green beans.
Bring to a boil.
Reduce heat and simmer for 1 hour or until potatoes are tender and the soup has thickened.
Garlic Butter

Ingredients:
6 garlic cloves, minced
1 cup boiling water
1/2 cup soft butter
2 Tbs. fresh parsley, finely minced
Salt and pepper to taste
Directions:
Set the unpeeled cloves in the boiling water. Bring to a boil, and boil 5 minutes. Drain, peel, and rinse the cloves under cold water. Return to the boiling water, and allow the water to boil up once more. Drain the garlic again, and with the salt and pepper, pound it to a smooth paste in the bottom of a small bowl. Beat the butter into the garlic.
Suggestions:
Use 1 teaspoon with broiled or boiled fish, with hamburgers, steaks, boiled potatoes, or to enrich sauces made with drippings from roasts.
