Corn Bread Pie

Ingredients:

1 lb. ground beef
1 can tomato soup
1 can crisp corn, drained
1 med bell Pepper, sliced or chopped
1 med onion, sliced or chopped
1/2 tsp salt
1 tsp pepper
1 tbsp chili powder
1 1/2 cans water

Directions:

Corn Bread Topping: Make your corn bread the way you usually do.

In a large frying pan brown the ground beef and drain off fat. Add tomato soup and 1 1/2 tomato soup cans of water. Add all the other ingredients. Stir and simmer for about 15 minutes. Then pour into a large oven proof bowl. Slowly spoon the corn bread topping over the beef mixture. If you try to put on to much at one time it will sink into the mixture.

Bake in the oven at 400° F. for about 25 minutes or until the corn bread is good and brown.

Serves: 4

Bourbon Pork Roast

Ingredients:

3 lbs. pork roast
2 tablespoons lemon juice
2 tablespoons brown sugar
1 tablespoon flour
1 teaspoon paprika
1/2 teaspoon salt
ground black pepper
1/4 cup water
1/8 cup cooking sherry
chopped parsley
1 bay leaf
1/4 cup bourbon

Directions:

Place the pork roast fat side up in a roaster. Rub the roast with lemon juice. Mix together the brown sugar, flour, paprika and salt. Rub this mixture all over the roast. Generously sprinkle with ground black pepper.

Combine water, 1/8 cup sherry, and 1/8 cup bourbon, and pour over the roast. Place a bay leaf in the pan and sprinkle the roast with parsley. Baste heavily and often.

After 1 1/4 hours, pour the remaining bourbon over the roast, and continue to baste until you are ready to serve roast. Bake approximately 2 1/2 hours or 45 minutes per pound.

Three Bean Casserole

Ingredients:

1 lb. hamburger
1 medium onion
1/2 cup packed brown sugar
3/4 cups catsup
1 tbs. worchestershire sauce
#2 can (2 1/2 cups) lima beans (drain)
#2 can (2 1/2 cups) light kidney beans (drain)
#2 (2 1/2 cups) can of pork and beans – do not drain.

Directions:

Cook hamburger and onions in a skillet until browned.

Drain off excess fat.

Mix brown sugar, catsup, and worchestershire sauce and add to meat mixture.

Combine with all three types of beans (make sure you have drained the lima and kidney beans).

Put in a casserole dish and bake for 1 hour at 350° F.

Low Sodium Cajun seasoning

1/4 cup garlic powder
1/4 cup onion powder
2 tablespoons paprika
1 tablespoon ground red pepper
1 tablespoon black pepper
1 1/2 teaspoons celery seeds
1 1/2 teaspoons chili powder
1 teaspoon salt
1 teaspoon lemon pepper
1/2 teaspoon ground nutmeg

Combine all ingredients. Store in an airtight container.

Mijo’s Slow Cooker Shredded Beef

Prep/Cooking Time: Ready in 10 Hrs 20 Min

Ingredients:

5 pounds chuck roast
3 cloves garlic, crushed
1 tablespoon paprika
1 tablespoon celery salt
1 tablespoon garlic powder
1 tablespoon dried parsley
1/2 tablespoon ground black pepper
1/2 tablespoon chili powder
1/2 tablespoon cayenne pepper
1/2 teaspoon seasoned salt
1/2 teaspoon mustard powder
1/2 teaspoon dried tarragon
4 fluid ounces beer
1 1/2 tablespoons Worcestershire sauce
4 tablespoons hot pepper sauce
2 teaspoons liquid smoke flavoring
1 large onion, chopped
1 green bell pepper, chopped
2 jalapeno chile peppers, chopped

Directions:

Using a sharp knife, poke several 1 inch deep holes in the roast. Insert the garlic slivers into the holes.

In a small bowl, combine the paprika, celery salt, garlic powder, parsley, ground black pepper, chili powder, cayenne pepper and seasoned salt. Mix together well and rub over the meat.

In a separate small bowl, combine the beer OR cola, Worcestershire sauce, hot pepper sauce and liquid smoke and mix well. Place the roast in a slow cooker and pour this mixture over the meat.

Add the onion, green bell pepper and jalapeno chile peppers to the slow cooker.

Cook on low setting for 10 hours, or more, if desired.

Kudzu Quiche’

Prep/Cooking Time: Start to finish: 1 hour

Ingredients:

2 packed cups fresh, young kudzu leaves (leaves should be 2- to 3-inches-wide)
4 eggs
1 cup baking mix (such as Bisquick)
1 cup grated Parmesan cheese
1/2 teaspoon dried marjoram
Dash salt and freshly ground black pepper
1 clove garlic, chopped
1/2 cup peanut or canola oil
1/2 to 3/4 cup milk
1/2 cup chopped onion
1/2 cup chopped green bell pepper

Directions:

Preheat oven to 350 F. Spray two 9-inch pie plates with cooking spray.

Place the kudzu leaves in a large saucepan. Add enough water to cover and bring to a boil. Once the water boils, reduce heat and simmer 1 minute.

Drain the leaves, and use paper towels to pat them dry. Set aside.

Wet the inside of a blender with water, then empty it. Add the eggs and blend lightly for several seconds. Add the baking mix, cheese, marjoram, salt and pepper. Blend for several seconds. Add oil and milk and blend until mixed through.

Add the onion, green pepper and kudzu leaves. Blend, in short bursts if needed, but do not puree until smooth. Pieces of onion, green pepper and kudzu still should be visible.

Pour the mixture into the prepared pie plates. Bake 30 to 40 minutes, or until firm at the center. Let cool before serving.

Makes 12 servings.

WARNING!

Be careful where you get your Kudzu. Many municipalities spray kudzu with herbicides. It does nothing to hurt the plants, of course, but it won’t do your body much good. If you’re picking wild Kudzu, stick to areas where you know your county hasn’t sprayed.

Chicken Dressing Casserole

Prep/Cooking Time: 1 hour

Ingredients:

3 pounds skinless, boneless chicken breast meat
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of celery soup
1 (10.75 ounce) can milk
1 1/2 cups chicken broth
1 (6 ounce) package seasoned cornbread stuffing mix

Directions:

Place chicken in a large saucepan full of lightly salted water. Bring to a boil; boil for about 30 minutes, or until chicken is cooked through (juices run clear). Remove chicken from pan, reserving broth. Cut chicken into bite size pieces and place in bottom of a 9×13 inch baking dish.

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl mix together cream of chicken soup and cream of celery soup. Fill one empty soup can with milk, and mix milk with soups. Pour mixture over chicken. In a small bowl combine stuffing and broth; mix together and spoon mixture over casserole.

Bake in the preheated oven for 45 minutes.

Mary Anne’s Moist and Nutty Carrot Loaf

Prep/Cooking Time: 1 Hr

Ingredients:

3 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
3 cups all-purpose flour
3 carrots
1 (15 ounce) can crushed pineapple
1 1/2 cups vegetable oil
2 cups white sugar
6 eggs
1 cup chopped walnuts
1 1/2 cups raisins

Directions:

Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9×5 inch loaf pans.

Sift together baking soda, salt, spices, and flour.

In a large bowl, combine ground carrots, pineapple, oil, and sugar. Mix in eggs. Blend flour mixture into carrot mixture. Mix well. Fold nuts and raisins into batter. Pour into prepared pans.

Bake at 375 degrees F (190 degrees C) for 45 minutes, or until a toothpick inserted into bread comes out clean.

Grasshopper Pie

Ingredients:

1 pkg. Nabisco chocolate wafer cookies
1 pt. jar marshmallow fluff
1/4 c. milk
4 drops peppermint extract
6-7 drops green food coloring
1 c. whipping cream, whipped

Directions:

Line a pan with chocolate wafers. In mixing bowl, combine marshmallow, milk, peppermint, and food coloring. Whip until fluffy. Fold in whipped cream. Pour over cookies. Freeze until firm, about 8 hours.

Sausage Balls

Ingredients:

1 lb breakfast sausage (raw)
2 cups shredded cheddar cheese
3 cups Bisquick

Directions:

Preheat Oven: 375° F.

Mix all ingredients. Mixture will be very dry but will form a dough if you work it long enough. Roll into small balls (about a tablespoon of dough each). Press onto a cookie sheet to flatten bottom slightly. Bake at 375 till lightly golden brown.

Note:

This works best if you grate the cheese from a block rather than buying the pre-shredded cheese which is coated to keep it from sticking together. You can add a dash of Cayenne pepper or some Tabasco sauce if you like things especially hot or use extra hot sausage.
