Irish Tea Cake

Ingredients:

1/2 cup butter, softened
1 cup white sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup confectioners’ sugar for dusting

Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch round pan.

In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time then stir in the vanilla. Combine the flour, baking powder and salt; stir into the batter alternately with the milk. If the batter is too stiff, a tablespoon or two of milk may be added. Spread the batter evenly into the prepared pan.

Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack, then turn out onto a serving plate. Dust with confectioners’ sugar right before serving.

Original recipe yield: 1 – 9 inch round cake

Alabama Coca Cola Cake

Cake:

2 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon baking soda
1 cup margarine
1 cup cola
3 tablespoons cocoa powder
1 1/2 cups miniature marshmallows
1/2 cup buttermilk
1 teaspoon vanilla extract
2 eggs, beaten

Icing:

4 cups confectioners’ sugar
1/2 cup margarine
6 tablespoons cola
3 tablespoons cocoa powder
1 teaspoon vanilla extract
1 cup chopped pecans

Directions:

Preheat the oven to 350 degrees. Generously grease and flour a 16 x 11-inch pan. Combine the flour, granulated sugar, and baking soda in a mixing bowl. In a saucepan, combine the margarine, cola, and cocoa powder, and stir until boiling. Remove from the heat, and stir into the flour mixture. Add the marshmallows, buttermilk, vanilla, and eggs, and mix well. Pour into the prepared pan. Bake for 30 to 35 minutes, until the center is set.

While the cake is baking, prepare the icing. Measure the confectioners’ sugar into a mixing bowl. Melt the margarine in a saucepan. Add the cola and cocoa, and stir until boiling. Remove from heat, and pour over the confectioners’ sugar. Add the vanilla, and beat on high speed for 2 minutes. Stir in the pecans, and pour over the hot cake.

Bran Muffins

Ingredients:

2 cups boiling water
2 cups raisins
5 teaspoons baking soda

Combine above ingredients in a small bowl and set aside.

1 cup margarine or butter (2 sticks or 16 tablespoons)
2 cups sugar
1 quart buttermilk
5 and 1/2 cups flour, sifted
1 cup chopped nuts
4 cups all-bran cereal
2 cups 40-percent bran flakes
4 eggs, beaten
1 teaspoon salt

Directions:

In a large bowl, cream sugar and margarine. Combine beaten eggs with buttermilk in a separate container. Mix together flour, cereals, salt and nuts in another bowl. Alternately add dry and wet ingredients to creamed mixture until just moistened. Stir in raisin mixture last. When ready to bake, fill greased muffin tins three-quarters full and bake at 375 degrees for 20 to 25 minutes.

Yields four dozen muffins.

Tip: For a smaller batch, reduce recipe by half.

Benne Cookies/Wafers

About:

Benne cakes are a food from West Africa introduced to this area by slaves. “Benne” means sesame seeds. The sesame seeds are eaten for good luck. Wafers and cookies made from benne are now a part of Kwanzaa (“first fruit” in Swahili), the African-American family festival that lasts from December 26 through January 1.

Ingredients:

3/4 cup butter
1 ½ cups brown sugar
2 eggs
1 ½ cups flour
½ cup sesame seeds
1 teaspoon vanilla
1/4 teaspoon baking powder
(OPTIONAL: Add just a “jot” of sesame oil to the butter and sugar while creaming the mixture.)

Directions:

Cream butter and sugar together and mix with other ingredients in the order given. Drop with a teaspoon onto a well-greased cookie pan, far enough apart to allow spreading while baking. Bake in a 325 degree F oven for 7-10 minutes. (Yield: 7 dozen.)

Classic Pecan Pie

Ingredients:

3 Eggs
1½ cup Roasted Pecans
1 cup Brown Sugar
1 cup Corn Syrup
2 tbl melted Butter
1 teaspoon Vanilla extract
1 unbaked 9-inch Pie Shell

Directions:

Beat eggs with a wire whisk or fork. Add butter, syrup, sugar and vanilla; mix well. Chop 1 1/4 Cup Pecans and Stir in. Pour into Pie Crust. Arrange rest of whole pecans on top of pie.

Bake at 350° for 50-55 min.

Tiramisu Anacapri

Note: This tiramisu was a hit with our Test Kitchens staff, who agreed that it’s one of the best they’ve come across. Ladyfingers can be found in the bakery or the frozen-food section of the supermarket. We used soft ladyfingers, which are made to be split.

Ingredients:

1 cup cold water
1 (14-ounce) can fat-free sweetened condensed milk
1 (1.4-ounce) package sugar-free vanilla instant pudding mix
1 (8-ounce) block 1/3-less-fat cream cheese, softened
1 (8-ounce) tub frozen reduced-calorie whipped topping, thawed
1 cup hot water
1/2 cup Kahlúa (coffee-flavored liqueur)
1 tablespoon instant espresso or 2 tablespoons instant coffee granules
24 cake-like ladyfingers (2 [3-ounce] packages)
3 tablespoons unsweetened cocoa, divided

Directions:

Combine first 3 ingredients in a large bowl; stir well with a whisk. Cover surface with plastic wrap; chill 30 minutes or until firm.

Remove plastic wrap, and add cream cheese. Beat with a mixer at medium speed until well-blended. Gently fold in whipped topping.

Combine hot water, Kahlúa, and espresso. Split ladyfingers in half lengthwise. Arrange 16 ladyfinger halves, flat sides down, in a trifle bowl or large glass bowl. Drizzle with 1/2 cup Kahlúa mixture. Spread one-third of pudding mixture evenly over ladyfingers; sprinkle with 1 tablespoon cocoa. Repeat layers, ending with cocoa. Cover and chill at least 8 hours.

Yield: 12 servings (serving size: about 2/3 cup)

Mary Anne’s Moist and Nutty Carrot Loaf

Ingredients:

3 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
3 cups all-purpose flour
3 carrots
1 (15 ounce) can crushed pineapple
1 1/2 cups vegetable oil
2 cups white sugar
6 eggs
1 cup chopped walnuts
1 1/2 cups raisins

Directions:

Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9×5 inch loaf pans.

Sift together baking soda, salt, spices, and flour.

In a large bowl, combine ground carrots, pineapple, oil, and sugar. Mix in eggs. Blend flour mixture into carrot mixture. Mix well. Fold nuts and raisins into batter. Pour into prepared pans.

Bake at 375 degrees F (190 degrees C) for 45 minutes, or until a toothpick inserted into bread comes out clean.

Grasshopper Pie

Ingredients:

1 pkg. Nabisco chocolate wafer cookies
1 pt. jar marshmallow fluff
1/4 c. milk
4 drops peppermint extract
6-7 drops green food coloring
1 c. whipping cream, whipped

Directions:

Line a pan with chocolate wafers. In mixing bowl, combine marshmallow, milk, peppermint, and food coloring. Whip until fluffy. Fold in whipped cream. Pour over cookies. Freeze until firm, about 8 hours.

Southern Pecan Pie

Ingredients:

3 Eggs, slightly beaten
1 1/4 Cup Broken Pecans
1 Cup Light Karo Syrup
1 Cup Sugar
2 Tbsp. Margarine or butter, (melted)
1 Tsp. Vanilla Flavoring
1 9″ Pie shell

Directions:

Preheat oven to350 degrees. Mix all ingredients together. Pour into unbaked pie shell. Bake for about one hour or until a knife inserted halfway between the center and the edge comes out clean. Cool.

Flourless Chocolate Cake

Ingredients:

4 (1 ounce) squares semisweet chocolate, chopped
1/2 cup butter
3/4 cup white sugar
1/2 cup cocoa powder
3 eggs, beaten
1 teaspoon vanilla extract

Directions:

Preheat oven to 300 degrees F (150 degrees C). Grease an 8 inch round cake pan, and dust with cocoa powder.

In the top of a double boiler over lightly simmering water, melt chocolate and butter. Remove from heat, and stir in sugar, cocoa powder, eggs, and vanilla. Pour into prepared pan.

Bake in preheated oven for 30 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Slices can also be reheated for 20 to 30 seconds in the microwave before serving.
