Classic Pecan Pie

Prep/Cooking Time: Total Prep Time 20 min.

Ingredients:

3 Eggs
1½ cup Roasted Pecans
1 cup Brown Sugar
1 cup Corn Syrup
2 tbl melted Butter
1 teaspoon Vanilla extract
1 unbaked 9-inch Pie Shell

Directions:

Beat eggs with a wire whisk or fork. Add butter, syrup, sugar and vanilla; mix well. Chop 1 1/4 Cup Pecans and Stir in. Pour into Pie Crust. Arrange rest of whole pecans on top of pie.

Bake at 350° for 50-55 min.

Chicken Provolone

Prep/Cooking Time: 45 Min

Ingredients:

4 skinless, boneless chicken breast halves
2 slices provolone cheese, halved
1 (10.75 ounce) can condensed cream of chicken soup
2/3 cup white wine
2 tablespoons melted butter
1/2 (16 ounce) package herb seasoned stuffing mix

Directions:

Preheat oven to 350 degrees F (175 degrees C). Arrange chicken breast halves in a single layer in a 9×13 inch baking dish. Top each breast half with a half slice of Provolone cheese.

In a medium bowl, blend cream of chicken soup and white wine. Pour over the chicken. In a separate medium bowl, mix the butter and stuffing mix. Top the chicken with the stuffing mixture.

Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Cornbread Dressing

Ingredients:

6 cups crumbled cornbread
4 cups crumbled light bread
1 teaspoon poultry seasoning
1 teaspoon salt
1 teaspoon sage
1/2 teaspoon pepper
1/2 teaspoon celery salt
1/2 teaspoon thyme
1/2 cup bell pepper
1/2 cup chopped onion
3 hard-cooked eggs, chipped
2 to 2 1/2 cups chicken or turkey broth

Directions:

Sautee onion, bell pepper, celery in 2 Tbsp. butter while preparing the ingredients. Them mix all ingredients and pour broth of chicken or turkey giblets and add cooked meat pieces that have been boiled. Stuff turkey or place in a greased roaster pan. Bake at 350° F. for 45 minutes or until done.

Southern-style Cornbread

Ingredients:

1 C. self-rising cornmeal
1/2 C. self-rising flour
2 T. sugar
3 T. oil
1 1/4 C. buttermilk
2 eggs lightly beaten

Directions:

Preheat oven to 400°F. Combine in a bowl the cornmeal, flour and sugar. Stir to blend. Add the oil, eggs and buttermilk. Mix well.

Heat a iron skillet on the stove. Add 1 T. oil and cover the bottom of the pan. When the pan is hot, pour the cornbread into it and spread it out to even it.

Bake for about 25 minutes or until brown.

Martha Nesbit’s Sweet Potato Souffle

Nicki’s Note:

My aunt Wilma’s recipe is very similar to this. Growing up, I knew this dish as “Sweet Potato Casserole”.

Dish:

4 cups sweet potatoes, mashed (approximately 2 large potatoes)
2 eggs
1 cup sugar
1/2 stick butter or margarine, melted
1 teaspoon vanilla
1 tablespoon orange juice

Topping:

1 cup brown sugar
1/2 cup all-purpose flour
1 cup chopped pecans
1 stick butter or margarine, melted

Directions:

Combine sweet potatoes, eggs, sugar, 1/2 stick butter or margarine, vanilla and orange juice. Pour into greased 3-quart casserole dish. Combine topping ingredients. Spread over potatoes. Cook at 350 degrees for 30 minutes, until brown and bubbly.

Serves 10 to 12.

Calico Baked Beans

2 cans Pork and Beans or baked beans
1 can small green Lima beans
1 can large butter beans (or garbanzo beans if can’t find b.b.)
1 can red kidney beans
1/2 lb. bacon
2 medium onions, chopped

Drain all but the Pork and Beans.

Cut bacon into small squares, about 1″ wide. Cook in skillet until nearly crisp. Discard all or nearly all drippings. Sauté onions in drippings or oil. Drain if desired.

To onions, add:

1 tsp. dry mustard
1 tsp. garlic powder
1/2 cup mild vinegar
1/2 cup brown sugar

Return bacon to mixture. Simmer 20 minutes. Place in large oven-proof pot and bake at 350 degrees for 1 hr. or cook in crock pot for 4-6 hours.

Southern Pecan Pie

Ingredients:

3 Eggs, slightly beaten
1 1/4 Cup Broken Pecans
1 Cup Light Karo Syrup
1 Cup Sugar
2 Tbsp. Margarine or butter, (melted)
1 Tsp. Vanilla Flavoring
1 9″ Pie shell

Directions:

Preheat oven to350 degrees. Mix all ingredients together. Pour into unbaked pie shell. Bake for about one hour or until a knife inserted halfway between the center and the edge comes out clean. Cool.

Chipper Banana Muffins

Ingredients:

2 1/4 cups all-purpose flour
1 1/2 teaspoons double-acting baking powder
1 1/2 teaspoons baking soda
1/2 cup sugar
1/2 cup unsweetened applesauce
2 eggs
1/3 cup canola oil
2 very ripe bananas, mashed
1/2 cup skim buttermilk
1/4 cup semisweet chocolate chips

Directions:

Preheat the oven to 350 F. Line eighteen 2 3/4 inch muffin cups with paper liners.

In a medium bowl, combine the flour, baking powder, and baking soda.

In a large bowl, with an electric mixer at medium speed, beat the sugar, applesauce, eggs and oil until frothy. With the mixer at low speed, alternately add the bananas and buttermilk with the flour mixture; stir until just combined (do not overmix). Fold in the chocolate chips.

Spoon the batter into the cups, filling each about two-thirds full. Bake until golden and a toothpick inserted in the center comes out clean, 20-25 minutes. Remove from the cups and cool completely on a rack.

Chicken Casserole

Prep/Cooking Time: 30 minutes

Ingredients:

3 cups dry noodles
6 ounces chickens
1/2 cup mayonnaise
1/3 cup chopped onions
1/2 teaspoon salt
10 1/2 ounces cream of mushroom soupor cream of chicken soup
1/2 cup milk
8 ounces grated cheddar cheese

Directions:

Cook noodles and drain. Combine chicken, mayonnaise, onion and salt with noodles, set aside. Blend soup and milk. Heat through; then add cheese until melted. Mix together with noodles.

Butter glass 9×13 inch oblong dish. Bake uncovered at 350 degrees for 30 minutes.

Flourless Chocolate Cake

Prep/Cooking Time: 45 Min

Ingredients:

4 (1 ounce) squares semisweet chocolate, chopped
1/2 cup butter
3/4 cup white sugar
1/2 cup cocoa powder
3 eggs, beaten
1 teaspoon vanilla extract

Directions:

Preheat oven to 300 degrees F (150 degrees C). Grease an 8 inch round cake pan, and dust with cocoa powder.

In the top of a double boiler over lightly simmering water, melt chocolate and butter. Remove from heat, and stir in sugar, cocoa powder, eggs, and vanilla. Pour into prepared pan.

Bake in preheated oven for 30 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Slices can also be reheated for 20 to 30 seconds in the microwave before serving.
