Mexican Steak With Chimichurri Sauce

Prep/Cooking Time: 1 hour 40 mins prep (includes 30 minutes of marinating)

Ingredients:

2 lbs boneless beef sirloin (1-1/2 inches thick)

Marinade or Sauce
2/3 cup olive oil
1/3 cup parsley, minced
1/3 cup cayenne pepper sauce
3 tablespoons lemon juice
1 tablespoon worcestershire sauce
2 teaspoons dried oregano leaves
4 garlic cloves, peeled & crushed

Directions:

Blend all marinade ingredients in a food processor.

Taste, and adjust seasonings if desired.

Score each side of the steaks 1/8 to 1/4-inch deep.

Reserving 2/3 cup marinade mixture as sauce, place steak in large resealable plastic bag with remaining marinade mixture.

Seal bag and marinate in refrigerator for at least 30 minutes.

Grill steak over hot coals (discarding marinade) 10 minutes per side for medium-rare or to desired doneness.

Let steak stand 5 minutes.

Slice steak diagonally.

Serve with reserved sauce mixture.

Makes 6-8 servings.

Taco Casserole

Prep/Cooking Time: 30 minutes / 15 mins prep

Ingredients:

2 lbs lean ground beef
1 (6 ounce) packet taco seasoning
1/2 (8 ounce) bag tortilla chips, broken into smaller pieces
shredded Mexican blend cheese or cheddar cheese or monterey jack cheese
shredded lettuce
diced seeded tomatoes
sliced black olives
salsa
sour cream

Directions:

Brown beef in skillet, and then stir in taco seasoning. Put meat mixture in a 13x9x2-inch baking pan and mix in the tortilla chips. Top with shredded cheese. Bake for about 15 minutes, or until hot and cheese is melted.

Remove from the oven and top with remaining ingredients.

Serve with rice and refried beans, if desired. Serves 6.

Cheeseburger Pie

Ingredients:

1 lb. ground beef
1/2 c. chopped onion
Salt & pepper to taste
1-1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
2 tomatoes, sliced
1 c. shredded cheddar or American cheese

Directions:

Grease 10 x 1-1/2 inch pie plate. Brown beef and onion, drain. Stir in salt and pepper. Spread in plate. Beat milk, baking mix and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake 25 minutes in 400 degree oven. Top with tomatoes; sprinkle with cheese. Bake until knife inserted in center comes out clean, 5 to 8 minutes. Cool 5 minutes.

Makes 6 to 8 servings.

Asian Fire Meat

Ingredients:

1/2 cup soy sauce
1 tablespoon sesame oil
2 tablespoons brown sugar
3 cloves garlic, crushed
1 large red onion, chopped
ground black pepper to taste
1 teaspoon red pepper flakes
2 tablespoons sesame seeds
2 leeks, chopped
1 small carrot, chopped
1 pound beef round steak, sliced paper thin

Directions:

In a large bowl, mix together the soy sauce, sesame oil, brown sugar, garlic, and red onion. Stir in the black pepper, red pepper flakes, sesame seeds, leeks and carrot. Mix in the meat by hand to ensure even coating. Cover and let marinate for at least 2 hours or overnight.

Brush the bottom half of a wok with cooking oil, and heat over medium-high heat. Put in all of the meat and marinade at once, and cook stirring constantly. The meat will be cooked after just a few minutes. Remove from heat and serve with rice or noodles.

For Korean style fire meat, roll the meat mixture up in a leaf of red lettuce.

Mexican Lasagna

Prep/Cooking Time: Prep Time: 25 Minutes / Cook Time: 20 Minutes

Ingredients:

1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
1 (14 ounce) can peeled and diced tomatoes with juice
10 (6 inch) corn tortillas
1 cup prepared salsa
1/2 cup shredded Colby cheese

Directions:

Preheat oven to 350 degrees F (175 degrees C).

In a large skillet over medium-high heat, brown the ground beef, and stir in the taco seasoning and tomatoes. Line a 9×13-inch baking dish with half the tortillas. Spoon the beef mixture into the dish, then top with the remaining tortillas. Spread salsa over the tortillas and sprinkle with the cheese.

Bake at 350 degrees F (175 degrees C) for 20 to 30 minutes, or until cheese is melted and bubbly.

Nicki’s Note:

My mother used to make this dish and is great for any picky eaters who will eat beef or other meats well. My favorite variation is to use tortilla, dipping, or corn chips instead of the flatten tortilla shells.

Mexican Cornbread

Ingredients:

1 lb. lean ground beef
1 small onion, chopped
3 Tablespoons green pepper, chopped
1 teaspoon salt
1 tablespoon chili powder
1 tablespoon catsup
8 oz. cream style corn

Directions:

Saute onion and green pepper in small amount of oil. Add ground beef and brown. Season with chili powder, salt and catsup. Stir in canned corn.

Cornbread: Sift together 3/4 cup cornmeal, 1/4 cup plain flour, 1 teaspoon baking powder and 1 teaspoon salt. Add 1 egg and 1-1/2 cups milk. Mix well.

Pour half of cornbread mixture into a well greased 10 inch iron skillet. Spread meat mixture over this. Add remaining cornbread mixture. Bake in a 400 F. oven until bread is done, about 30-40 minutes. Cut into wedges.

Serves 6-8.

Willie’s Notes:

Serve with a green salad for a complete meal. I like to serve this with sour cream on the side for those that like it.

Basic Baked Spaghetti

Ingredients:

3/4 pound lean ground beef
1 (16 ounce) jar spaghetti sauce
1 pound spaghetti
1 cup shredded mild Cheddar cheese

Directions:

Preheat oven to 350 degrees F (175 degrees C). In large skillet, cook hamburger until brown. Mix spaghetti sauce into skillet. Reduce heat and simmer.

Meanwhile, bring a large pot of lightly salted water to a boil. Mix in pasta and cook for 8 to 10 minutes or until al dente; drain.

Mix together spaghetti and meat mixture, pour into 9×13 pan. Top with cheese and bake for 30 minutes, or until heated through and cheese is bubbly.

Teriyaki

Prep/Cooking Time: 1 hour 4 minutes / 1 hr prep

Ingredients:

1 lb fat-free boneless sirloin steaks, cubed
1 (10 oz) can pineapple chunks
1 garlic clove, crushed
3/4 teaspoon ground ginger
1/4 cup soy sauce
1/2 cup pineapple syrup

Directions:

Drain pineapple and reserve juice.

Blend in large bowl the garlic, ginger, soy sauce and pineapple syrup.

Add meat cubes (which are cut 3/4″) and stir well.

Let marinate one hour.

Thread meat cubes and pineapple chunks on 8 four inch skewers.

Put under broiler until desired length of time, or broil over glowing coals.

Press a stuffed olive on the tip of each skewer if desired.

Sprinkle with monosodium glutamate and serve hot.

I highly recommend leaving out the MSG!

Spaghetti with Cincinnati-Style Marinara

Prep/Cooking Time: Start to Finish: 30 minutes

Ingredients:

12 ounces dried spaghetti
1 pound ground beef
1 cup chopped onion
1 to 2 tablespoons chili powder
1/4 teaspoon ground cinnamon
1 15-ounce can red kidney beans, rinsed and drained
1 14-ounce jar marinara sauce
1/2 cup water
1 cup shredded cheddar cheese (4 ounces)

Directions:

Cook spaghetti according to package directions. Meanwhile, in a large skillet cook beef and onion until meat is brown and onion is tender. Drain off fat. Stir chili powder and cinnamon into meat mixture; cook and stir for 2 minutes.

Add kidney beans, marinara sauce, and the water. Cook over medium heat until boiling, stirring occasionally.

Place hot cooked spaghetti in a large serving bowl. Spoon sauce over spaghetti; sprinkle with cheddar cheese. Makes 6 servings.

Hamburger Soup (aka Spicy Potato Soup)

Ingredients:

1 lb ground beef
4 Cups cubed, peeled potatoes (6 – 7)
1 Small onion, chopped
3 Cans (8-oz each) Tomato sauce
4 Cups water
1 teaspoon salt
1 teaspoon pepper
2 teaspoons hot pepper sauce (Texas Pete)
1 Small can whole kernel yellow corn
1 Cup frozen cut green beans – OPTIONAL

Directions:

In a large kettle, brown ground beef and drain.

Add potatoes, onion, and tomato sauce.

Stir in water, salt, pepper, hot pepper sauce, corn and green beans.

Bring to a boil.

Reduce heat and simmer for 1 hour or until potatoes are tender and the soup has thickened.
